Our Caviar Lime is harvested in the Valencia region of Spain from late August - early September. Its color changes depending on the harvest period and its maturity, ranging from emerald green at the beginning of the season to red, yellow, and a beautiful coral pink. Its caviar texture is a tangy delight that can be used in both sweet and savory dishes, for an explosion of flavor in the mouth.
